Autumn Apple Pancake

Head Red + Blondi

I love this recipe, it's the perfect consistency. It has the perfect amount of apples and I love to eat it with a cup of warm apple cider.
I would say it is a wonderful fall treat.
We originally got this recipe from Love & Lemons, then gave it our own little twist. ;-)

You will need :
  • 3 apples {peeled + sliced}
  • 1/2 cup milk
  • 3 eggs
  • 1/4 teaspoon baking powder
  • 1/4 cup brown sugar
  • about 1 tablespoon lemon juice
  • 1/4 teaspoon nutmeg
  • 3 tablespoons flour
  • 2 tablespoons butter
  • powdered sugar {optional}
Put the prepared apples, brown sugar, butter and lemon juice in a skillet, on med. heat. Cook apples until tender.
Beat milk and eggs together.
Whisk nutmeg, baking powder and flour together.
Whisk the egg mixture into the flour mixture. Pour into skillet.
Put skillet into the oven at 375 degrees, for 18-20 minutes.
Take out of the oven and if you want, sift powdered sugar over top and enjoy!

Happy autumn!
