What's Cooking Wednesday: Glazed Donut Muffins

It's What's Cooking Wednesday! And we have made... Glazed Donut Muffins!

They are sooo good!

For the Batter:
* 1/4 cup butter
* 1/4 cup vegetable oil
* 1/2 cup granulated sugar
* 1/3 cup brown sugar
* 2 large eggs
* 1 1/2 teaspoons backing powder
* 1/4 teaspoon baking soda
* 3/4 to 1 1/4 teaspoons ground nutmeg, to taste
* 1 teaspoon cinnamon
* 3/4 teaspoon salt 
* 1 teaspoon vanilla extract 
* 2 2/3 cups all-purpose-flour
* 1 cup milk

For the Glaze:
* 3 tablespoons butter {melted}
* 1 cup confectioner sugar {sifted}
* 3/4 teaspoons vanilla extract
* 2 tablespoons hot water
{Nutmeg is optional}


 Step 1:
Preheat the oven to 425 degrees F. Lightly grease a standard muffin tin, or line with 12 paper muffin cups and grease the muffin cups with non-stick vegetable oil spray {this will ensure that the muffin cups peel of nicely}.

Step 2:
 In a medium sized mixing bowl, cream together the butter, vegetable oil and sugars till smooth {scraping down the sides every once in a while to ensure everything is thoroughly mixed}.

Step 3:
Add one egg, beating till combined, add the other.
scrape down the sides.

Step 4:
Beat in the baking powder, baking soda, salt, vanilla extract, nutmeg and the cinnamon.

Step 5:
Combine the flour in alternatively with the milk, beginning and ending with the flour. Scrape down the side and combine again to ensure that everything is combined.

Step 6:
Spoon the batter evenly in to the prepared muffin tin, filling the cups nearly full.

Step 7:
Bake the muffins for 15 to 17 minuets, or until they are a pale golden brown and a toothpick or cake tester is inserted into the center of the muffin, comes out clean.

Step 8:
In a medium bowl, prepare the glaze by mixing together the malted butter, confectioner sugar, water and vanilla extract. Whisk until smooth.

Step 9:
When the muffins have cooled slightly, dip the muffin crown in to the glaze and allow the glaze to harden, dip again {optional}.                 
 And you have delicious Glazed Donut muffins!
