What's Cookin' Wednesday: Pretzel Bites

Pretzel Bites!
Boy, are these good!

Ingredients:
* 1 1/2 cups warm water {100 to 110 degrees F}
* 1 tablespoon sugar
* 2 teaspoons kosher salt
* 2 1/4 teaspoons active yeast
* 4 1/2 cups all-purpose flour
* 2 ounces unsalted or salted melted butter {whatever you prefer}
* Vegetable oil {for pan}
* 10 cups water
* 2/3 cup baking soda
* 1 large egg yolk beaten with 1 tablespoon of water

Directions:
Combine the water, sugar and kosher salt in a mixing bowl, then sprinkle the yeast on top. But don't mix. Allow it to sit for about 5 minuets, or until it starts to foam.

Add the flour, butter and, using the dough hook attachment, mix on low speed until well combined.

 Change to medium speed and kneed until the dough is smooth and pulls away from the side {about 4-5 minuets}. Remove the dough from the bowl, clean the bowl then oil it well with coconut or vegetable oil. Return the dough to the bowl, cover with plastic wrap and sit in a warm place for about 50-55 minuets, or until dough has doubled in size.

Preheat oven to 450 degrees F. Line 2 jellyroll pans with parchment  paper and lightly brush with vegetable oil. Set aside.

Bring the 10 cups of water and the baking soda to a rolling boil, in an 8-quart saucepan or roasting pan.

In the meantime, lightly oil a cutting board or a hard surface. Once the dough has doubled in size, take it out of the bowl and cut it into 8 or 9 pieces.

Roll each piece out until it's about an inch around. Take that rope and cut bite size pieces {We cut ours to about an inch}. Continue doing so until all your dough has been cut into bite size pieces.
Then take the pretzel bites and place 8 or 9 in the water for about 30-35 seconds.

 Then take them out and place them on the prepared jellyroll pan. Continue to do so until all are boiled.

Once they are all boiled, mix one large egg yolk and 1 table spoon of water in a bowl. Lightly brush the egg wash onto the pretzels and sprinkle with salt.

Put into oven and bake for about 12-14 minuets.

A few minuets before the pretzels are done, melt about 1 tablespoon of butter to brush over top when they come out {melt 2 tablespoons if you have 2 sheets of pretzel bites}.

You can either leave them the traditional way, with butter and salt...

Or roll them in cinnamon and sugar.
